What You’ll Need:
- 3 Eggs
- 2 Pieces of Sourdough Bread
- Cheese of your choice (Cheddar, mozzarella, provolone all work great!)
- Cherry Tomatoes, halved
- Sliced Avocado
- Arugula
- Ground Pepper
- Red Pepper Flakes (optional, for a little kick!)
- Extra Virgin Olive Oil (EVOO)
Instructions:
- Heat a frying pan on low-medium heat.
- Pour the beaten eggs into the frying pan.
- Coat both sides of the sourdough slices in the eggs, pressing them gently to soak up the egg.
- Let the egg set slightly on the bottom, then flip the sourdough slices.
