I finally tried this recipe and they were absolutely delicious! No weird texture whatsoever. And honestly, I never would have guessed that the creamy component was cottage cheese. So, even if youโ€™re not a huge cottage cheese fan, I highly encourage you to give this a try!

The Simple Recipe:

Ingredients:

  • 2 pasture-raised eggs
  • ยฝ cup whole milk cottage cheese
  • Coconut cooking oil (or your preferred cooking oil)
  • Salt and pepper to taste
  • Optional: Sourdough toast

Instructions:

  1. Grease a non-stick pan with coconut cooking oil.
  2. In a bowl, whisk together the eggs and cottage cheese until well combined.
  3. Pour the egg mixture into the greased pan.
  4. Scramble the eggs over low-medium heat until fully cooked, stirring occasionally. Be careful not to overcook them!
  5. Remove from heat and season with salt and pepper.
  6. Serve immediately, optionally with toasted sourdough bread.

After they were done, I toasted some sourdough and added a little salt and pepper. Honestly canโ€™t get enough of them! This is a game-changer!
