The Simple Recipe:
Ingredients:
- 2 pasture-raised eggs
- ½ cup whole milk cottage cheese
- Coconut cooking oil (or your preferred cooking oil)

- Optional: Sourdough toast
Instructions:
- Grease a non-stick pan with coconut cooking oil.
- In a bowl, whisk together the eggs and cottage cheese until well combined.
- Pour the egg mixture into the greased pan.
- Scramble the eggs over low-medium heat until fully cooked, stirring occasionally. Be careful not to overcook them!
- Remove from heat and season with salt and pepper.
- Serve immediately, optionally with toasted sourdough bread.
After they were done, I toasted some sourdough and added a little salt and pepper. Honestly can’t get enough of them! This is a game-changer!
