Coating:

Instructions:
- Prepare the Ice Cream Layer: Blend all ice cream layer ingredients until smooth. Transfer to a glass dish (approximately 5”x5”) lined with parchment paper.
- Freeze: Place the dish in the freezer for at least 2 hours.
- Make the Peanut Butter Layer: In a small bowl, mix the peanut butter layer ingredients (peanut butter and maple syrup) until well-combined. *Tip: Room temperature ingredients are easier to work with. If the mixture is too thick, stir in 1-2 tbsp of coconut milk.
- Assemble: Spread the peanut butter layer evenly on top of the frozen ice cream layer.
- Add Peanuts: Top with chopped peanuts.
- Freeze Again: Place the dish back in the freezer for about an hour.
- Coat in Chocolate: Melt the chocolate chips. Cut the frozen dessert into bars. Coat each ice cream bar with the melted chocolate.
- Final Touch: Sprinkle with sea salt (if desired). Freeze until the chocolate hardens.
