Ingredients:
- 2 cups water
- 6 tsp monkfruit sweetener (or your preferred sweetener)
- 2 tsp agar agar powder
- Fruit of choice (I used kiwi, strawberries & blueberries)
Instructions:
- Cut your fruit into small cubes and place them in your ice cube mold (or any mold you prefer). Ensure the mold is clean and dry.
- To a saucepan, add water and monkfruit sweetener. Bring the mixture to a boil over medium heat.
- Add agar agar powder to the boiling mixture and whisk vigorously until the powder completely dissolves. This is crucial to avoid a grainy texture.
- Simmer the mixture for one minute, stirring occasionally. This helps the agar agar properly set.
- Turn off the heat. Let the mixture cool slightly for a minute or two to prevent it from melting your fruit.
- Pour the liquid jelly carefully into the ice cube mold, ensuring each cube is filled. Try to distribute the fruit evenly.
- Refrigerate the mold for about 3 hours, or until the jelly is completely set. The longer you refrigerate, the firmer the jelly will be.
- Once set, carefully remove the fruit jellies from the mold and enjoy! ❤️
Tips & Variations:
- Fruit Choices: Experiment with different fruits! Raspberries, grapes, mango, or even citrus fruits like oranges and lemons would be delicious.
- Sweetener: Feel free to adjust the amount of monkfruit sweetener to your liking. You can also use other sweeteners like honey, maple syrup, or stevia.
- Agar Agar: Agar agar is a vegan alternative to gelatin. It’s important to dissolve it completely for a smooth texture.
- Mold Options: Get creative with your molds! You can use ice cube trays, silicone molds, or even small bowls.
- Storage: Store leftover fruit jellies in an airtight container in the refrigerator for up to 3 days.
Let me know if you try them! I’d love to hear what variations you create.
