Cake Ingredients:
- 1 pineapple (cubed)
- 2/3 cup raisins
- 1 cup buckwheat
- 1 ½ cups sunflower seeds
- 1 cup unsweetened coconut flakes
- 1 cup shredded carrots
Frosting Ingredients:
- 2 lemons juiced
- 1 cup cashews
- 1 mango cubed
- 4 tablespoons organic maple syrup
- 4 tablespoons coconut oil melted
- pinch of turmeric (for color)
Instructions:
- Mix all the raw cake ingredients in a food processor until evenly combined.
- Transfer into an 8” x 8” glass dish and refrigerate while you make the frosting.
- Blend the frosting ingredients together until smooth and creamy.
- Spread the frosting across the raw cake.
- Chill the cake in the refrigerator for at least a half hour before eating.
