This cake literally tastes like a piece of paradise! The fruity flavors are so refreshing, and the lemon mango frosting tops it all off!

Tangy Tropical Cake

Cake Ingredients:

  • 1 pineapple (cubed)
  • 2/3 cup raisins
  • 1 cup buckwheat
  • 1 ½ cups sunflower seeds
  • 1 cup unsweetened coconut flakes
  • 1 cup shredded carrots

Frosting Ingredients:

  • 2 lemons juiced
  • 1 cup cashews
  • 1 mango cubed
  • 4 tablespoons organic maple syrup
  • 4 tablespoons coconut oil melted
  • pinch of turmeric (for color)

Instructions:

  1. Mix all the raw cake ingredients in a food processor until evenly combined.
  2. Transfer into an 8” x 8” glass dish and refrigerate while you make the frosting.
  3. Blend the frosting ingredients together until smooth and creamy.
  4. Spread the frosting across the raw cake.
  5. Chill the cake in the refrigerator for at least a half hour before eating.
