What I Eat in a Day (WIEIAD) – Healthy & Delicious Plant-Based Meals
I’ve been having so much fun experimenting in the kitchen and trying out new dishes! Dessert is always my favorite part of the day. Sharing my WIEIAD below. Check out my outfit from @rhoback!
My Daily Meal Breakdown:
9am: Celery Juice
16 oz of celery juice on an empty stomach. A refreshing and healthy way to start the day!
11am: Sourdough Toast Extravaganza
Two types of sourdough toast for a satisfying brunch:
- Savory Sourdough Toast: Mashed avocado, hemp seeds, EVOO, flaky salt, crushed red pepper flakes.
- Sweet Sourdough Toast: Raw almond butter, banana slices, raw honey, ceylon cinnamon.
2pm: Jennifer Aniston Salad
My take on the iconic Jennifer Aniston Salad! So refreshing and packed with nutrients.
- Chickpeas, diced cucumber, quinoa, diced red onion, pistachios, fresh parsley & mint
Dressing: Lemon, EVOO, salt & pepper, raw honey
5pm: Gluten-Free Penne Pasta
A hearty and flavorful gluten-free pasta dish.
- GF Penne, cherry tomatoes, sliced mushrooms, diced red onion, dried oregano, parsley, cilantro & basil
Homemade Pesto: Fresh arugula, fresh basil, raw cashews, EVOO, salt & pepper, lemon juice
7pm: Healthy Cookie Dough Bites
My favorite part of the day! Refined sugar-free cookie dough bites.
- Oat flour, almond flour, sea salt, coconut oil, maple syrup, vanilla flavoring, dark chocolate chips
Conclusion
This WIEIAD is just a snapshot of how I enjoy nourishing my body with delicious and wholesome foods. I love experimenting with new recipes and adapting them to be dairy-free and refined sugar-free whenever possible. I hope this inspires you to explore new flavors and prioritize healthy eating!
